Vom Stein
THE VOM STEIN PLOT IS FOUND IN THE TOWN OF FRAUENKIRCHEN.
On an 1886 land suvey, the site is shown as vine land, but vine cultivation might even taken place here many years earlier. A processional path, that no longer exists had carved stone stations of the cross on it and gave the farmland its name of Stein, which means stone. The soil here is made up of large quartz-streaked pebbles that come right up to the surface.

Umathum has five acres of plantings here on the highest point of this gently rounded hilltop.
The soil is very dry and warm, with limited water supply. This induces slow grape growth, and small berries with thick skins. In the fall, this leads to both more concentration of taste and tannin in the berries, and greater resistance to disease. The rows run west to east following the direction of the prevailing wind. The plot is thus well ventilated, allowing for quick drying of the berries and thus less susceptibility to disease.
Suitability of the grape varieties:
Optimal for Sankt Laurent, a grape that is particularly happy on this warm, dry site that produces its best results.
